Fresh Pesto

Hello Readers, and happy Monday!

Today I wanted to talk to you about fresh pesto. It is delicious, bright green ( my favorite color) and an automatic flavor booster. If you are looking for a way to elevate your routine dishes there are many ways pesto can help you. I use it as a marinade for chicken and fish; it also plays well with quinoa, and pasta.

Fresh pesto lasts about 4 weeks in the freezer tasting as fresh and looking as bright as it did when you first made it. All you need to do is thaw the pesto for about 10 mins before cooking, just enough so that you can break it up with a spoon to scoop out as much as you need for that night and, toss it back in the freezer. I have a 24 oz. plastic container full of pesto I made about 3 weeks ago. I pull it out once a week to “fancy-fi” dishes for my family. I spread it over white fish or chicken bake it in the oven and it adds a fresh new dish to my routine sheet pan baked chicken/fish.
