ooey gooey cheese sauce

Hello Readers and Happy Monday,

My question to you this week is do you love macaroni and cheese? Alfredo sauce? Cheese and its gloriousness in general? well then let me tell you how to make the most silky cheese sauce from scratch at home.

Step 1 select your cheese. this step is crucial depending on what you are making and who it is for will determine the cheese you select.

Step 2 make a roux- take a half a stick of butter and melt it in a pot. next add about 1/4 cup of flour or more if needed and cook the flour with the melted butter. after about 2 or 3 mins of cooking slowly start to whisk in bout 2 cups of milk ( heavy cream works also) and add salt and pepper. Next add in your selected shredded cheese and gently whisk until combined. If you want to loosen your sauce just add more milk.

Step3 pour over your dish or mix it into cooked pasta.

Step 4 completely indulge in amazingly ooey gooey cheese sauce.

Fudge

Hello Readers and happy NYE!

Today I wanted to talk with you about fudge and how incredibly versatile it can be. Fudge can serve as a gift to friend or neighbor, be brought to a party and more importantly be stored in your fridge for two weeks as a treat! I like to make fudge for the holiday season to keep it special but, it is so versatile you can flavor it anyway you want for special occasions.

This holiday season I made a candy cane white chocolate fudge, a butterscotch pecan fudge, and a dark chocolate sea salt fudge. Recipe can be found here.

December Menu

For the month of December 2018, Mayari’s Voyage is working with a set menu for the holiday season. Maximum number of guests is 30. For any questions, please email chef Mayari at mayarisvoyage@gmail.com ,Thank you and Happy Holidays!

·       Mac & cheese bites- gooey mac & cheese deep fried served with tomato sauce

·       Wontons- crispy wonton stuffed with beef and raisins.

·       Cucumber Cups- cucumbers stuffed with hummus and roasted red peppers

·       Chicken salad- chicken served with mixed greens, goat cheese, and a vinaigrette

·       7 Layer bar- This decadent bar is a great way to end the night. Graham cracker crust with milk chocolate, white chocolate toasted coconut, butterscotch, and walnuts.

Green Bean Salad

This past weekend I had the pleasure to cater a wedding! One of the side dishes I made was a cold green bean salad  served with a lemon vinaigrette and golden/red grape tomato. This was great as a cold side dish to add some texture and flavor contrast to the deep, rich, fall  flavors from the rest of the menu.

To make this plate:

All you need to do is shock the green beans ( add them into boiling water for about 5 mins take them out and place them in ice water)

Make a lemon Vinaigrette

Slice grape tomatos in half

Sprinkle lemon zest on top of salad and mix together.

A few weeks ago I had the opportunity to speak to people about eating locally, seasonally, and sustainably. Eating what is in season and grown near by your home is one of the many ways we can help our bodies get the proper nourishment it needs through the year. My company only uses locally grown food from the abundance of farms here in MA, and the menu rotates every season and in accordance to what is available.I am passionate about feeding people nourishing meals appropriate to the season so that they get the most of the out of the dining experience. Even if you only eat with me once, your body will be able to hold on to the nutrients longer! If you read this entire paragraph you are a bo$$ and I am truly grateful! Please consider eating more seasonal produce help your farmers and your body 💚
